These moist, delicious little muffins are an adorable morning or afternoon tea treat with a cup of coffee. With soft chunks of red pear and apples mixed through a lightly spiced muffin mix, they are an extra special treat. I used half red pears and half red apples but you can use all or either or your favourite varieties!

Spiced Red Pear and Apple Muffins
Makes: 12
Prep time: 30 mins (+ 20 mins cooking time)
Ingredients:
- 2 red pears, skin on, cored, diced
- 2 small red apples, skin on, cored, diced
- 1/4 cup white sugar
- 60g butter
- 2 tablespoons honey
- 6 tablespoons water
- 1 teaspoon ground cinnamon
- 1/2 teaspoon powdered ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 1/2 cups self-raising flour
- 2 eggs, lightly beaten
Cooking Instructions:
- Preheat oven to 180C. Line a 12 hole muffin pan with papers and set it aside.
- In a medium saucepan, combine the pears, apples, sugar, butter, honey, water, spices and salt over medium heat. Bring to the boil and simmer 3-5 minutes or until sugar is dissolved and fruit has softened slightly. Remove from heat and set aside to cool.
- In a large mixing bowl, add flour then pour in cooled fruit mixture and eggs. Stir until just combined. Spoon evenly into prepared muffin pan and bake for 15-20 minutes or until just set in the centres. Transfer to a wire rack to cool.
- Serve warm with butter or honey or just on its own.
Notes:
- Red pears are seasonal so feel free to use what is available in place of the red pears.
- Muffins make great breakfast foods but can also be a nutritious work or school treat!
- Warm these up in a bowl and serve with a caramel dessert sauce and a scoop of ice cream for a fruity winter dessert.
We have only used red pears in this recipe as they were really cheap when I did my weekly groceries. Red pears are not the nicest eating pears, but look amazing and are great for baking. I often make pear muffins with tinned pears but since I had fresh pears available I used them instead. I hope you enjoy this recipe.
