No-Bake Orange & Lemon Slice

Makes: 12
Prep time: 15 mins  (+ 2 hours chilling time)

Ingredients:

Slice

  • 1/2 cup sweetened condensed milk
  • 100g butter
  • 200g Scotch Finger biscuits (or other plain sweet biscuits)
  • 1 cup desiccated coconut
  • 1 orange, rind finely grated

Lemon Icing

  • 2 cups icing sugar mixture
  • 2 tablespoons soft butter
  • 1 lemon, juiced (3 tablespoons)
  • Extra coconut for decorating

Cooking Instructions:

  1. Grease and line the base and two sides of a square cake tin. Place condensed milk and butter in a heatproof jug and microwave on high for 1 minute, stir until butter melts.
  2. Place biscuits in a food processor and process to fine crumbs. (You can place them into a snaplock bag and roll with a rolling pin if you don't have a food processor). Combine crumbs, coconut and the rind in a bowl. Add hot butter and condensed milk mixture. Stir well until combined.
  3. Press mixture into prepared pan. Refrigerate for 1 1/2 hours or until firm. 
  4. Make lemon icing. Place icing sugar mixture, butter and 3 tablespoons lemon juice in a bowl. Beat with a wooden spoon until smooth. Spread icing over slice. Decorate with extra coconut if desired. Refrigerate a further 30 mins or until the icing has set. Cut into pieces. Devour!

I originally made a slice similar to this at a cafe I worked at when I was younger. I've made so many versions of this slice but this one is our family favourite combination of orange and lemon. And there is no baking, so it couldn't be easier. The hardest part is waiting for it to chill before you can eat it... It's truly mouthwatering!

Notes:

  • You can use any sweet biscuits for the base of the slice.
  • Try making a lemon version by replacing the orange zest with lemon
