Mixed Berry Jam & Coconut Muffins
Makes: 12
Prep time: 15 mins (+ 15 mins cooking time)
You'll Need:
- 1 1/4 cups self-raising flour
- 1/2 cup shredded coconut
- 1/4 cup sugar
- 2/3 cup milk
- 2 eggs
- 1/3 cup olive oil
- 1/2 cup mixed berry jam, plus 1/4 cup extra
- Shredded coconut to decorate
Cooking Instructions:
- Preheat oven to 160C. Grease and line a 12 hole muffin pan. Add dry ingredients to a large bowl and combine.
- In a separate jug add milk, eggs and oil and beat with a fork until well combined. Pour wet mixture into dry mixture and stir with a fork until just combined.
- Stir through 1/2 cup mixed berry jam gently. Spoon mixture into muffin pans. Use remaining 1/4 cup jam and add a dollop to each muffin. Sprinkle with extra coconut.
- Bake for 12-15 minutes or until just done. Cool in the tin for 5 minutes before turning out onto a wire rack to cool completely. Be extremely careful as the jam will be very HOT!
Notes:
- My kids love these in their lunch boxes, but they are also lovely for morning tea with a coffee!
- You can swap out the jam for any other jam you have available.
- Be extremely cautious with the hot muffins as jam can cause serious burns.
