Lime & Macadamia Slice


This slice has a crumbly macadamia shortcrust base with a decadent, creamy lime topping. Perfect for morning or afternoon tea!

Serves: 12 
Prep time: 15 mins + 30 mins cooking (+  cooling time)

You'll Need:

  • 1 cup self-raising flour
  • 1 cup dessicated coconut
  • 1/2 cup caster sugar
  • 1/2 cup crushed raw macadamia nuts
  • 100g melted butter
  • 1 x 395g can sweetened condensed milk
  • 1/2 cup fresh lime juice (about 2 limes)
  • zest of 2 limes

Cooking Instructions:

  1. Preheat oven to 180C. Grease and line the base and sides of a 16 x 26cm slice tin. 
  2. Use a wooden spoon to combine flour, coconut, sugar, macadamias and melted butter in a large bowl until it comes together. Spread into prepared pan. Use a metal spoon to press firmly over the base. Bake for 12 minutes. Set aside to cool.
  3. Reduce oven temperature to 150C. Use a whisk to combine sweetened condensed milk, lime juice and zest in a large bowl until smooth and well combined. Pour into the pan and spread evenly over the pre-baked base. Bake in oven for 15 mins or until just firm to the touch. Leave to cool completely in tin. Lift out carefully, cut into slices and serve. 

Notes:

  • You can swap out the limes for lemons if you like!
  • Try replacing the macadamias with cashews or a mix of cashews and pistachios.

This creamy, tangy slice is one of my personal favourites. The macadamias make the base deliciously smooth and crumbly and the lime zest really makes your mouth water in the topping.
