Honey & Oat Picnic Bars


I really like how simple this little slice is. The combination of honey, oats and coconut make this granola-type bar irresistible snacks. My kids enjoy these in place of muesli bars in their lunch boxes and I often have one for afternoon tea. They hold together well during transport which is what makes them a fabulous picnic hamper addition. Using a cup measure for all the ingredients makes it super simple to put together too.


Honey & Oat Picnic Bars

Makes: 12 bars
Prep time: 10 mins (+ 30 mins cooking time)

Ingredients:

  • 1 cup self-raising flour
  • 1 cup rolled oats
  • 1 cup desiccated coconut
  • 1 cup white sugar
  • 1/2 cup melted butter
  • 3 tablespoons honey
  • 1 large egg
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions:

  1. Preheat oven to 180C. Grease and line the base and two long sides of a slice tin, leaving an overhang on the long sides. 
  2. In a large mixing bowl add flour, oats, coconut, sugar, cinnamon and salt and stir with a wooden spoon to combine. In a separate jug combine butter, honey and egg and beat until thick. Pour egg mixture into oat mixture and stir to combine.
  3. Spoon slice mixture into the prepared pan and press flat with the back of a metal spoon. Bake for 25-30 minutes or until golden on top. Cool in the tin, then remove using the paper overhang. Slice into 12 even bars. Enjoy!


Notes:

  • This is a very simple slice that doesn't use any fancy ingredients or techniques. 
  • You can add a bunch of things to this slice to make so many variations. Try adding some chopped nuts or fruit. We also adore it with chocolate chips.
  • You can replace the honey with maple syrup and have some tasty spiced maple bars!
  • To make these a little fancier you can make a simple cinnamon glaze and drizzle it over the bars. 




I really hope you enjoy this recipe, I have been making it since some of my very big kids were very little and everyone has enjoyed it's simple flavours. It also stores really well in the fridge and refreshes nicely when back at room temperature so these bars are nearly always somewhere in my fridge at least once a week.
