This is a very grown-up little slice! Golden oats and coconut are blended with gooey caramel and dried cranberries to create a crispy base for a zesty lime glaze. It might look complicated but it's actually a really simple slice to make with only 5 ingredients in the base, and it's egg-free!
Cranberry & Lime Slice

Makes: 12
Prep time: 20 mins + 20 mins cooking time (+ 1 hour cooling time)
Ingredients:
Slice
- 2 cups rolled oats
- 1 cup shredded coconut
- 1 cup dried cranberries (see notes for substitutions)
- 125g butter
- 1/2 cup brown sugar
Lime Icing
- 3 cups icing sugar mixture
- 60g butter, softened
- 3tbs lime juice (about 3 limes)

Cooking Instructions:
- Preheat oven to 160C. Grease and line a 20cm x 30cm slice tin with baking paper, allowing an overhang on the long edges.
- Place butter and brown sugar in a saucepan over low heat. Cook, stirring, for 2 minutes or until butter is melted and sugar dissolves. Beat to combine and allow to cool slightly. Combine rolled oats, dried cranberries and coconut in a bowl. Add butter mixture to the oat mixture. Stir to combine.
- Spoon mixture into prepared pan. Press mixture into pan using the back of a spoon. Bake for 20 minutes or until golden and firm. Allow to cool in the pan.
- Make lime icing. Place icing sugar mixture, butter, lime juice and 1 teaspoon of cold water in a bowl. Beat with a wooden spoon until smooth. Spread icing over slice. Refrigerate for 30 minutes or until or until the icing has set. Lift out slice using baking paper. Cut into pieces. Enjoy!

Notes:
- You can substitute any other dried fruits for the cranberries! Try chopped dried apricots instead.
- Make sure the slice is quite golden before removing it from the oven. If it's not cooked enough it won't set properly in the middle.
- Take care when making the caramel as it can become very hot and cause serious burns.

I love how simple this slice is to make and it's a hit with the kids too, though I tried to hide it from them! Limes are in season at the moment and we get a steady free supply from neighbours and school gardens so I have been using them a lot lately. They are generally very expensive here so I am taking advantage of the excess free limes! If you aren't so lucky, you can use bottled lime juice. Or even switch it out for lemon or orange... Cranberry and orange... *drool*
This recipe is also very adaptable depending on what dried fruits you have on hand. I will probably make other versions of this using various fruits and icings and see what combinations I can come up with. I hope you enjoyed this recipe, thanks for reading.
