Caramelized Onion & Cheese Loaf

 

This delicious quick-bread style loaf is a quick and easy lunchtime treat. It is tasty warm from the oven, sliced, with lashings of butter. But also keeps welll in the fridge for weekday lunches! The caramelized onions really are the shining star of this recipe.

Caramelized Onion and Cheese Loaf



Serves: 8
Prep time: 15  (+ 35 mins cooking time)

You'll Need:

  • 1 1/2 cups self-raising flour
  • 1 cup + 1 cup of grated cheddar cheese (or your favourite semi-hard cheese)
  • 1/2 cup grated Grana Padano cheese
  • 1/2 cup sliced green onion
  • 1 tablespoon fresh thyme leaves
  • 2/3 cup milk
  • 1 egg
  • 1/3 cup olive oil
  • 1/2 cup homemade caramelized onions
  • salt and pepper to taste

Cooking Instructions:

  1. Preheat oven to 180C. Grease and line a round cake tin. Combine flour, 1 cup grated cheddar, Grana Padano, green onions and thyme in a large bowl. Add milk, egg and oil to a jug and stir well. Pour this mixture into the dry mixture and combine gently with a fork. 
  2. Spoon roughly into the base of prepared tin, making sure you cover the base but don't smooth the top. Carefully spoon the caramelized onions over the top. Sprinkle with extra cheese and season.
  3. Bake for 30 - 35 minutes or until a skewer inserted in the centre comes out clean. Leave to cool slightly before lifting out of the pan. Slice and serve warm with plenty of butter, or cool completly before storing.


Notes:

  • This is best eaten fresh on the day it is made, but it can be stored in an airtight container in the fridge for up to 3 days.
  • You can use your favourite store bought onion relish or jam to top this loaf!
  • Try using a different shaped tin for a unique style
  • It can also be made in individual servings in a muffin tin, adjust the cooking time as needed.

This was one of the most delicious dishes I have personally had in quite a while! I got to eat some fresh today and it was sensational. Even my kids who don't usually eat onions were convinced to try this loaf because it smelled so wonderful. I've made this a hundred times but this was the first time I used homemade caramelized onions. The rest is tucked safely in the fridge for work lunches for the rest of the week.
